Elevate Waldorf salad with refreshing broccoli for added nutrition.
Ingredients:
  • 1 large head broccoli, cut into florets
  • 1 red delicious apple, cored, cut into thin matchsticks
  • 2 stalks celery, trimmed, thinly sliced
  • 57.50 gm walnuts, toasted, roughly chopped
  • 50g baby spinach leaves
  • 20.00 ml chopped fresh chives
  • 61.88 gm whole egg mayonnaise
  • 42.00 gm lemon juice
Instructions:
  • Blanch broccoli in boiling water for 3 minutes until vibrant green and slightly tender. Shock in cold water, drain, and let cool.
  • In a large bowl, mix together apple, celery, walnuts, spinach, chives, and broccoli. In a small jug, combine mayonnaise and lemon juice. Season with salt and pepper.
  • Drizzle the creamy mayo mixture over the fresh salad, gently toss to mix well, and serve.
