A vibrant and colorful side dish packed with vitamin C and easy to prepare.
Ingredients:
  • 10 cups frozen broccoli florets (from two 22-oz bags), thawed and drained
  • 2 cans (14.75 oz each) cream style sweet corn
  • 1/4 teaspoon pepper
  • 2 eggs, slightly beaten
  • 2 tablespoons butter or margarine, melted
  • 3/4 cup herb-seasoned stuffing
Instructions:
  • Preheat oven to 350°F. Combine broccoli, corn, salt, pepper, and eggs in an ungreased 3-quart casserole dish or a 13x9-inch glass baking dish. In a small bowl, mix melted butter with stuffing and evenly sprinkle over the vegetable mixture.
  • Bake uncovered for about 1 hour until the stuffing turns golden and the vegetables are heated through.
