Parmesan crusted salmon

Elevate your meal with a tasty salmon and parmesan dish, served alongside flavorful broccoli and corn for an impressive feast.
Ingredients:
  • 36.40 gm olive oil
  • 4 fresh salmon portion, skin-off
  • 1 clove garlic, minced
  • 125.00 ml finely grated parmesan cheese
  • 62.50 ml panko breadcrumbs
  • 30g butter, melted
  • 20.00 ml chopped fresh parsley
  • 2 lemons, zest only
  • 1 whole broccoli, remove stem
  • 2 large corn
  • Salt and pepper, for seasoning
Instructions:
  • Preheat your oven to 180C. Then, in a large pot, bring 2L of water to a boil with a flavorful touch of salt.
  • Combine olive oil, garlic, parmesan cheese, breadcrumbs, butter, parsley, and lemon zest in a bowl until fully incorporated.
  • Lay the salmon on a baking dish lined with parchment paper, then generously coat the fillet with the crust mixture.
  • Bake the salmon in the oven for 8-10 minutes until cooked through.
  • Once the water reaches a boil, cut the corn into 4-5 pieces, adjust based on size, and add to the salted boiling water. Cook the corn for 3 minutes before adding the broccoli. Cook both vegetables together for an additional 5 minutes.
  • Drain the broccoli and corn, then season generously with salt and pepper.
  • After perfectly cooking the succulent salmon, transfer it from the oven directly onto the cutting board. Present the delectable broccoli and corn on the same board for a visually appealing finish.
