Quick and easy broccolini and fetta pasta ready in 20 minutes!
Ingredients:
  • 375g large shell pasta
  • 2 bunches Broccolini®, halved lengthways
  • 80g pea
  • 18.20 gm olive oil
  • 3 bacon rashers, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 3 spring onions, thinly sliced
  • 42.00 gm lemon juice
  • 100g fetta, crumbled
Instructions:
  • Boil pasta in a saucepan of water according to package instructions until al dente. Add broccolini and peas in the last 3 minutes of cooking. Drain the pasta, saving 1/4 cup (60ml) of cooking liquid. Combine pasta, vegetables, and reserved liquid back in the saucepan.
  • Heat the oil in a large frying pan over medium-high heat until shimmering. Cook the bacon, stirring occasionally, until crisp, about 3-4 minutes. Add the garlic and spring onion and cook, stirring, for another minute. Season with salt and pepper to taste.
  • Combine the savory bacon mixture, tangy lemon juice, and creamy feta with the pasta. Gently toss everything together until well combined. Serve the delicious mixture evenly among serving bowls.
