Indulge in a versatile broccolini and bacon tart for any meal or outdoor outing.
Ingredients:
  • 265g (1 3/4 cups) plain flour
  • 125g butter, chilled, chopped
  • 2-60.00 gm chilled water
  • 4 short-cut bacon rashers, thinly sliced
  • 65g (3/4 cup) coarsely grated cheddar
  • 125ml (1/2 cup) pouring cream
Instructions:
  • In a food processor, blend the flour and butter until they form fine breadcrumbs. Slowly add water until the mixture barely sticks together. Roll out the dough on a floured surface until it's 5mm thick. Line an 11.5 x 34cm fluted tart tin with the pastry, trim any extra dough, then chill in the fridge for 30 minutes.
  • Cook the bacon in a large non-stick frying pan over medium heat, stirring frequently, for 3-4 minutes until lightly golden. Remove to a paper towel-lined plate.
  • Preheat the oven to 200°C. Line the pastry case with non-stick baking paper and fill it with pastry weights or rice. Bake for 15 minutes, then remove the paper and weights. Continue baking for 5 minutes or until lightly golden. Reduce the oven temperature to 160°C.
  • 1. Set the tin on a baking tray. Sprinkle half of the bacon and half of the cheddar over the pastry. Layer the broccolini on top, adjusting as needed. Combine whisked eggs and cream in a bowl, then pour over the broccolini. Top with the rest of the bacon and cheddar. Bake for 35 minutes until lightly set.
