Broccolini pasta cooked in savory bacon grease with garlic and Parmesan for a delicious, easy weeknight dinner.
Ingredients:
  • 1 (16 ounce) package dry penne pasta
  • 6 slices bacon
  • 12 cloves garlic, minced
  • 0.75 pound broccolini, cut into 1 inch pieces
  • salt and pepper to taste
  • 0.33333331346512 cup freshly grated Parmesan cheese
Instructions:
  • Boil a large pot of lightly salted water. Add pasta and cook until tender, approximately 8 minutes. Drain pasta.
  • Cook the bacon in a large skillet over medium heat until browned and crisp. Drain on paper towels, keeping the drippings in the skillet.
  • Combine half of the garlic with the bacon drippings in the skillet and sauté over medium-low heat for 3 minutes, stirring often. Introduce broccolini and cook until tender yet vibrant, for 3 to 4 minutes, stirring continuously. Introduce the remaining garlic, season with salt and pepper, and add the pasta to the skillet. Toss to combine. Remove from heat, fold in Parmesan cheese, sprinkle with crumbled bacon, give it a final toss, and serve.
