Broccolini crostini platter recipe

Broccolini crostini is a colorful and crunchy appetizer with endless serving possibilities.
Ingredients:
  • 2 bunches Perfection Fresh broccolini
  • 1 loaf sour dough, cut into 12 pieces
  • 56.88 gm extra virgin olive oil
  • 1 large garlic clove, halved
  • micro herbs, to garnish
  • 2 large red capsicum
  • 2 brown onions, halved, thinly sliced
  • 2 long red chillies, thinly sliced
  • 2 large garlic cloves, halved
  • 7.50 gm Moroccan spice blend
  • 150g Medjool dates, pitted, chopped
  • 180.00 gm firmly packed brown sugar
  • 250.00 ml red wine vinegar
Instructions:
  • For the Moroccan capsicum relish: - Prep the capsicum by removing the membrane and seeds, then chop into 1cm pieces. - Heat oil in a heavy-based saucepan over medium heat. - Sauté onions, chilli, and garlic for 5 minutes until soft. - Stir in the spice blend and cook for 2 minutes. - Add capsicum, dates, sugar, and vinegar; bring to a boil. - Reduce heat and simmer for 30 minutes until thickened. - Season with salt, then transfer the hot relish to hot sterilized jars to cool.
  • Add the Perfection Fresh broccolini to a pot of boiling salted water and cook for 1 minute. Drain and cool under cold water, then pat dry. Optionally, halve the stem.
  • 1. Heat up a chargrill pan or barbecue grill on high heat. Mix oil and garlic, then brush both sides of the bread with the mixture. Grill the bread for about 2 minutes on each side until it's lightly charred. Once done, transfer the bread to a cutting board. Next, grill the broccolini in batches, for 3-4 minutes, making sure to turn them until lightly charred.
  • Spread the tangy sourdough with zesty relish, pile on the vibrant broccolini, sprinkle with fresh herbs, and present your masterpiece.
