Broccolini with balsamic vinegar and almonds

Delicious green vegetable with asparagus-like stems and pretty florets, perfect steamed or in Italian-inspired dish.
Ingredients:
  • 25g (1/4 cup) flaked almonds
  • 27.30 gm extra virgin olive oil
  • 2 bunches broccolini, halved lengthways
  • 20.00 ml balsamic vinegar
Instructions:
  • Toast the almonds in a frying pan over medium heat, stirring frequently, until they turn a pale golden color, about 4 minutes. Then, remove them from the pan and transfer to a small heatproof bowl.
  • In a pan over medium-high heat, heat 1 teaspoon of oil. Cook half the broccolini for 3 minutes, turning occasionally, until bright green and tender crisp. Transfer to a serving plate. Repeat with another teaspoon of oil and the remaining broccolini.
  • In a small jug, mix together the vinegar and remaining oil. Sprinkle the almonds over the broccolini, then drizzle the dressing on top.
