Ingredients:
  • 1/4 cup unsalted raw hazelnuts
  • 8 tablespoons unsalted butter
  • 2 tablespoons minced shallots
  • 1 teaspoon chopped fresh parsley
  • 1/4 teaspoon grated lemon zest
  • Pinch of salt
  • 2 lobster tails (6 to 8 ounces each), fresh or frozen
Instructions:
  • Toast the hazelnuts in a small skillet over medium to medium-high heat until fragrant and lightly browned. Remove from the pan and wrap in a dry, clean dish towel. Rub the hazelnuts in the towel to remove most of the papery skins. Coarsely chop and set aside.
  • Achieve perfectly browned butter: In a small stainless steel saucepan over medium heat, melt the butter until it foams up, recedes, and the milk solids brown, releasing a delightful nutty fragrance. Strain most of the browned milk solids out and reserve 2 tablespoons of the browned butter for brushing onto the lobster tails before broiling.
  • Finish the sauce by stirring in the chopped hazelnuts, parsley, shallots, lemon zest, and salt to the remaining brown butter. Reserve for later use.
  • Prepare lobster tails for broiling: Place a rack in the middle of the oven and preheat the broiler. Line a broiling or roasting pan with foil. Using kitchen shears, cut the top of the lobster tail shells lengthwise from end to base. Turn the tail upside down, break the bottom shell, then gently open the shell a bit. Carefully separate the meat from the shell, leaving it attached to the tail, and place the meat on top of the shell. Arrange the tails on the foil-lined pan.
  • Brush lobster tails with reserved browned butter and broil until meat is cooked through and shells are bright red, about 7 to 10 minutes (less time for smaller tails), reaching an internal temperature of 145°F.
  • Drizzle the browned butter hazelnut sauce over the perfectly cooked lobster tails before serving on individual plates.
