Cheesy, broiled tomatoes - a tasty side for any meal.
Ingredients:
  • 4 Roma tomatoes
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.5 teaspoon dried Italian herb seasoning
  • 0.5 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley
Instructions:
  • Preheat broiler as per manufacturer's instructions and line a baking sheet with aluminum foil.
  • Halve the tomatoes crosswise and trim a small slice off the rounded side to create a stable base for them on the pan.
  • Lay tomato halves on the pan and generously season with salt, pepper, and Italian seasoning to your liking.
  • Broil seasoned tomatoes under the broiler for about 4 minutes, ensuring they are carefully monitored to prevent burning.
  • Top each tomato half with a generous sprinkle of 1 tablespoon grated Parmesan cheese before placing them back under the broiler.
  • Broil until the Parmesan cheese is beautifully melted and bubbly, for just 45 seconds to 1 minute.
  • Place the broiled tomatoes on a plate or serving platter, and optionally sprinkle with fresh parsley. Serve the tomatoes while still warm.
