Broiled ripe tomatoes topped with gooey mozzarella, savory Parmesan, and crispy breadcrumbs.
Ingredients:
  • 2 large tomatoes, cut into 3/4-inch slices
  • 1 tablespoon olive oil
  • 0.5 teaspoon dried basil leaves
  • 0.5 teaspoon dried oregano
  • 1 clove garlic, minced
  • salt and ground black pepper to taste
  • 0.33 cup soft bread crumbs
  • 0.33 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 dash balsamic vinegar
Instructions:
  • Position the oven rack 6 inches below the broiler, preheat the broiler, and neatly lay out tomato slices on a baking sheet lined with foil.
  • Mix together the olive oil, basil, oregano, garlic, salt, and pepper in a bowl before generously brushing the mixture onto the tomatoes.
  • Mix together bread crumbs, gooey mozzarella cheese, and savory Parmesan cheese in a small bowl, then generously sprinkle the flavorful mixture over the juicy tomatoes.
  • Broil until the topping is golden brown, about 3 to 4 minutes, checking often to prevent burning.
  • Plate the tomatoes and give them a tempting drizzle of balsamic vinegar before serving.
