Quick and delicious broiled tomatoes with blue cheese and panko topping.
Ingredients:
  • 3 tablespoons panko bread crumbs
  • 0.13 teaspoon garlic powder
  • 4 roma (plum) tomatoes
  • 1 tablespoon olive oil
  • 0.25 cup crumbled blue cheese
Instructions:
  • Position an oven rack 4 to 5 inches below the heat source and preheat the broiler.
  • In a small skillet over medium heat, melt butter. Add panko bread crumbs and garlic powder, stir until well combined, and cook until bread crumbs are lightly browned, about 1 to 2 minutes. Remove from heat.
  • Halve tomatoes lengthwise and arrange them on a baking sheet, cut sides facing up. Drizzle with olive oil and season with salt and pepper. Broil until tomatoes are heated through and slightly golden, approximately 3 minutes.
  • Dice blue cheese into smaller pieces if necessary. Sprinkle evenly over the tomatoes, followed by the bread crumb mixture. Broil until the cheese is melted and the bread crumbs are golden brown, approximately 1 minute. Keep a close eye to prevent burning.
