Experience a delightful broiled mushroom salad with juicy tomatoes and fresh greens - ready in just 20 minutes!
Ingredients:
  • 1/2 cup Italian dressing
  • 3/4 lb sliced fresh portabella mushrooms
  • 4 cups bite-size pieces mixed salad greens
  • 1/2 cup crumbled herbed or plain chèvre (goat) cheese (2 oz)
  • 1/2 cup shredded mozzarella cheese (2 oz)
  • 4 slices French bread, toasted and cut in half
  • 4 roma (plum) tomatoes, sliced
Instructions:
  • Preheat the oven to broil. Grease the broiler pan rack with cooking spray. Coat the mushrooms with dressing on both sides, saving some for later. Arrange the mushrooms on the rack in the broiler pan. Broil with the tops 2 to 4 inches from the heat for 4 minutes; then flip. Broil for an additional 3 minutes, or until mushrooms are tender.
  • Divide the crisp salad greens onto 4 plates. In a small bowl, combine the cheeses and spread them on the toast.
  • Arrange the mushrooms over the bed of salad greens, then scatter the tomatoes on top. Finish with a drizzle of the remaining dressing. Accompany with a side of toast.
