Elevate your post-dinner treat with a vibrant jelly-pineapple duo.
Ingredients:
  • 85g Original Strawberry jelly crystals
  • 85g Original Lime jelly crystals
  • 85g Original Lemon jelly crystals
  • 12.00 gm gelatine powder
  • 250ml pineapple juice
  • 125ml thickened cream
  • Cream wafer or chocolate biscuits, to serve
Instructions:
  • Divide the jellies into individual bowls. Pour 1/2 cup (125ml) boiling water into each bowl. Stir until dissolved, then mix in 1/2 cup (125ml) cold water. Chill until firm.
  • Dissolve gelatine in 1/4 cup (60ml) hot water, let it cool, then mix into pineapple juice. Chill in the fridge for 10 minutes.
  • Beat the cream with an electric beater until stiff peaks form, then whisk it into the pineapple mixture. Cut the jellies into 3cm cubes and gently fold them through the pineapple mixture.
  • Divide the mixture evenly into 6 x 3/4 cup (185ml) serving glasses and chill until firm. Enjoy with biscuits on the side.
