Pan-seared SPAM with caramelized onions, mushrooms, and cheese tossed with bucatini pasta for a crispy and savory dish.
Ingredients:
  • 0.33333334326744 (8 ounce) package bucatini (dry)
  • 0.33333334326744 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cut into small cubes
  • 2 tablespoons olive oil, divided
  • 0.25 teaspoon crushed black peppercorns
  • 1 onion, sliced
  • 1 tablespoon white sugar
  • 6 mushrooms, sliced
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon red pepper flakes
  • salt and ground black pepper to taste
  • 1 tablespoon unsalted butter
  • 2 tablespoons grated Parmesan cheese
  • 1 (1 ounce) slice mozzarella cheese, cut into small cubes
Instructions:
  • Break the bucatini into quarters.
  • In a skillet over medium heat, sear luncheon meat in 1 tablespoon of olive oil until crispy, sprinkle with crushed peppercorns, and cook for about 5 minutes. Remove from heat and set aside.
  • In a separate pan, heat the remaining oil over medium-low heat. Cook the onion, covered, until soft for 5 to 7 minutes. Add sugar and continue cooking, stirring every 2 to 3 minutes, until the onion is very soft and browned, about 10 to 15 minutes.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Add bucatini and cook for about 5 minutes until al dente. Drain the pasta.
  • Combine mushrooms, Parmesan cheese, Italian seasoning, garlic powder, red pepper flakes, salt, and black pepper with the onions in the pan. Stir well and cover. Cook until the mushrooms shrink and release moisture, approximately 5 minutes. Add butter and cook for an additional 3 minutes until flavors blend. Mix in the crispy meat and Parmesan cheese. Stir to combine.
  • Pour out the pasta and combine with the mushroom mixture. Sprinkle in the mozzarella cheese. Turn up the heat and cover the pan. Cook until pasta forms a golden crust, stirring occasionally, for 3 to 5 minutes.
