Try my delicious Italian chicken recipe inspired by Brooklyn living.
Ingredients:
  • 0.5 cup olive oil, divided
  • 6 cloves garlic, sliced
  • 1 teaspoon red pepper flakes
  • 1 (28 ounce) can diced tomatoes with garlic and olive oil
  • 0.5 cup tomato sauce
  • 1 bunch fresh basil, chopped
  • 1 (12 ounce) package dried penne pasta
  • 2 cups bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1 pound thin chicken breast cutlets
Instructions:
  • In a large skillet over medium heat, warm 1/4 cup of olive oil. Add garlic and saute until fragrant. Sprinkle in red pepper flakes and saute briefly. Pour in diced tomatoes, tomato sauce, and basil. Simmer for 20 minutes, stirring occasionally.
  • While waiting, heat a large pot of water with a touch of salt until it boils. Add penne pasta and cook for 8 minutes or until tender. Drain the pasta.
  • Whisk eggs in a small bowl. In another bowl, combine bread crumbs with garlic powder, salt, and pepper. Dip chicken cutlets in the egg mixture, then coat with seasoned bread crumbs.
  • In a large skillet over medium heat, cook the chicken in the remaining olive oil for approximately 5 minutes on each side, or until the coating turns a rich dark brown.
  • Take out the chicken, slice it, add to the sauce, and simmer for 10 minutes. Mix in the cooked penne, simmer briefly to absorb the flavor, then serve.
