Fabulous homemade pumpkin pie with rich creamy filling, spiced to perfection and topped with a sensational cinnamon brown sugar streusel.
Ingredients:
  • 1 (15 ounce) can pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 2 egg yolks
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 2 egg whites
  • 1 (9 inch) unbaked pie shell
  • 2 tablespoons all-purpose flour
  • 0.25 cup packed brown sugar
  • 2 tablespoons butter, chilled
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Combine pumpkin, sweetened condensed milk, and egg yolks in a large bowl. Add 1 teaspoon each of cinnamon, ginger, nutmeg, and salt and mix well. In a separate large glass or metal bowl, whip the egg whites until soft peaks form. Carefully fold the whipped egg whites into the pumpkin mixture. Pour the filling into the pie shell.
  • Preheat the oven and bake the pie for 15 minutes. While the pie is baking, make the streusel topping by combining flour, brown sugar, and 1 teaspoon cinnamon in a small bowl. Use a fork or pastry blender to blend in cold butter until crumbly, then mix in chopped nuts. Sprinkle the topping over the pie.
  • Lower the oven temperature to 350 degrees F (175 degrees C) and bake for another 40 minutes, or until fully set.
