Delicious and satisfying brown rice salad with broccolini and avocado, ready in just 35 minutes - perfect for a quick and healthy meal!
Ingredients:
  • 200.00 gm medium-grain brown rice
  • 2 bunches broccolini, trimmed
  • 60g baby spinach
  • 1 large avocado, thinly sliced
  • 20.00 ml rice wine vinegar
  • 40.00 ml gluten-free tamari
  • 36.80 gm vegetable oil
  • 1/2 tsp sesame oil
  • 3.00 gm sesame seeds, toasted
  • 125.00 ml small fresh mint leaves
  • 125.00 ml fresh coriander leaves
  • 1 long red chilli, seeded, thinly sliced
  • 40.00 ml natural almond kernels, roughly chopped
Instructions:
  • Prepare the rice according to the instructions on the package.
  • Cook broccolini in a pot of boiling salted water for 2 minutes until tender. Drain and immediately cool under cold water, then drain well.
  • Arrange rice and spinach on plates then add broccolini and avocado on top. Season with salt and pepper. Combine vinegar, tamari, oils, and sesame seeds in a small jug and mix well. Drizzle the dressing over the broccolini mixture. Finish by sprinkling with mint, coriander, chilli, and almonds. Serve and enjoy!
