Garlic prawns with broccolini and almonds

Quick weeknight meal ready in just 15 minutes!
Ingredients:
  • 450g pkt white rice
  • White Rice in 2 1/2 Minutes
  • 20.00 ml tamari (wheat-free soy sauce)
  • 2.50 gm cornflour
  • 18.20 gm peanut oil
  • 2 bunches broccolini, halved, stems halved lengthways
  • 1 red capsicum, halved, seeded, thinly sliced
  • 500g fresh green garlic prawns
  • 80ml (1/3 cup) white wine
  • 4.00 gm brown sugar
  • 25g (1/4 cup) flaked almonds
  • 125.00 ml fresh coriander leaves
Instructions:
  • Prepare the rice according to the package instructions. Mix tamari, water, and cornflour in a small bowl.
  • Heat the oil in a smoking hot wok. Quickly stir-fry the broccolini and capsicum until almost tender, about 3 minutes.
  • Toss in the prawns and stir them for a minute. Pour in the wine, sugar, and cornflour mix, then cook and stir until the sauce thickens, around 1 minute.
  • Scoop the fragrant rice into individual serving bowls. Spoon the flavorful prawn mixture over the rice, sprinkle with crunchy almonds, and garnish with fresh coriander leaves.
