Create a flavorful pasta with sundried tomato pesto in a bag for a quick and juicy meal. Experiment by swapping spinach with broccolini or kale. Use fresh pasta for a fast cook time and enjoy the aromatic garlic and herb marinade.
Ingredients:
  • 300g pkt Fresh Pappardelle Pasta
  • 150g (1/2 cup) Sundried Tomato Pesto
  • 60ml (1/4 cup) thickened cream
  • 40g baby spinach
  • 220g pkt Garlic Prawns in a Garlic Herb Marinade
Instructions:
  • Preheat oven to 220C/200C fan forced. Boil pasta until perfectly al dente, then drain and return to the pan. Mix in sundried tomato pesto and cream, ensuring pasta is evenly coated.
  • Cut 4 pieces of baking paper into squares measuring 30cm each. Divide the pasta mixture among the paper squares by placing it in the center. Top each with spinach and prawns. Fold two sides of the paper over the filling to enclose it, then tuck the remaining sides under to seal the packets. Transfer the packets to a baking tray.
  • Bake for 12 minutes or until prawns are tender. Place each parcel on a serving plate, then gently unwrap. Serve with lemon wedges.
