Get the kids involved in making tasty prawn toasts for a family favorite dish.
Ingredients:
  • 300g cooked peeled prawns
  • 20.00 ml coarsely chopped fresh continental parsley
  • Salt & freshly ground black pepper
  • 450g loaf white bread
  • 50g reduced-fat dairy spread
  • 1 bunch baby bok choy, washed, leaves separated
Instructions:
  • Heat the grill to medium. Combine prawns, parsley, and garlic in a food processor, pulsing until coarsely chopped. Season with salt and pepper.
  • Slice the white tank loaf into four 1.5cm-thick slices. Cut each slice in half diagonally. Spread both sides of the bread with dairy spread. Grill on a wire rack, positioned 6cm from the heat source, for 2-3 minutes per side until golden brown. Remove from grill and serve.
  • Evenly spread the prawn mixture onto the toasts and grill for an additional 2 minutes until they turn a light golden brown.
  • Distribute the bok choy evenly on serving plates and top with prawn toasts. Serve right away.
