Picnic-perfect rolls with basil, rocket, and juicy pink prawns.
Ingredients:
  • 2 x 60cm sesame seed baguettes (French breadsticks)
  • Butter, to spread
  • 1 x 120g pkt baby rocket leaves
  • 125.00 ml fresh basil leaves
  • 600g large cooked prawns, peeled, deveined
  • 1 lime, halved
  • 125ml (1/2 cup) Cafe Dip aioli with lime
Instructions:
  • Divide the baguettes evenly into 3 portions. Carefully slice each baguette lengthwise without cutting all the way through, then generously spread butter inside each one.
  • Place equal portions of the rocket, basil, and prawns on each baguette. Use kitchen string to securely tie the filling at 3cm intervals.
  • Evenly squeeze lime juice over the baguettes and drizzle with aioli before serving.
