Brown rice and vegetable salad with basil dressing

Transform your lunch with a delicious and nutritious salad using leftover meats. Perfect for busy adults on the go!
Ingredients:
  • 200g leftover roast beef, thickly sliced
  • 2 onions, cooked, cut into halves
  • 250g packet Uncle Ben's® Microwave Brown Rice
  • 1 zucchini, halved lengthways, sliced
  • 1/2 yellow capsicum, thinly sliced
  • 11.80 gm wholegrain mustard
  • 30.00 ml red wine vinegar
  • 18.20 gm extra virgin olive oil
  • 20.00 ml fresh basil leaves, finely chopped
  • Basil leaves, extra, to serve
Instructions:
  • Cook the rice in the microwave as directed on the packet, then transfer it to a bowl. Mix in the zucchini, cover, and let it sit for 5 minutes before serving.
  • Combine the sliced beef with the rice mixture, onion, tomato, and capsicum.
  • Mix together the mustard, vinegar, oil, and basil, then pour over the rice mixture and toss thoroughly. Season with salt and pepper, garnish with basil leaves, and enjoy.
