Brown sugar marsala fruits

Enhance seasonal fruits by grilling them for a sweet and flavorful caramelization.
Ingredients:
  • 2 freestone peaches
  • 2 large blood plums
  • 2 large nectarines
  • 4 large apricots
  • 125.00 ml marsala wine (see note)
  • 45.00 gm brown sugar
  • Mascarpone cheese or Greek-style yoghurt, to serve
Instructions:
  • Preheat the grill to high heat and line a grill tray with foil. Halve the peaches, plums, nectarines, and apricots, then remove the stones. Arrange the fruit, cut side up, on the grill tray and sprinkle with marsala and sugar.
  • Position the tray under the grill, approximately 8cm from the heat source. Grill the fruit for 4 to 5 minutes until the sugar caramelizes. Transfer the hot fruit to a serving platter and drizzle with the juices from the grill. Serve alongside mascarpone.
