Marsala dates with savoiardi & mascarpone

Dates paired with creamy mascarpone and spiced syrup create a decadent and delightful treat.
Ingredients:
  • 185ml (3/4 cup) marsala
  • 185ml (3/4 cup) water
  • 125g (3/4 cup, lightly packed) brown sugar
  • 18 (about 500g) fresh dates
  • 250g (1 cup) mascarpone
  • 1/4 tsp ground cardamom
  • 16.00 gm brown sugar, extra
  • 12 savoiardi sponge finger biscuits
  • Savoiardi, extra (optional), to serve
Instructions:
  • Combine marsala, water, and sugar in a saucepan over medium heat, stirring until sugar dissolves. Simmer for 5 minutes, then add dates and bring to a boil. Let macerate for 10 minutes before serving.
  • In a small bowl, mix together the mascarpone, cardamom, and extra brown sugar.
  • Pass dates through a fine sieve into a bowl, saving the syrup. Soak 1 savoiardi in reserved syrup, then place in a serving glass, breaking if needed. Add a spoonful of mascarpone mixture on top. Repeat with the rest of the savoiardi, syrup, and mascarpone. Distribute dates among glasses and drizzle over leftover syrup. Optionally, finish with more savoiardi.
