Elevate any occasion with a timeless bread and butter pudding that's perfect year-round.
Ingredients:
  • 110g sultana
  • 100ml sweet Marsala
  • 300ml milk
  • 300ml thickened cream
  • 2 orange zest, pared strips
  • 1 vanilla bean, split, seeds scraped
  • 3 eggs
  • 1 egg yolk
  • 150g caster sugar
  • 50g unsalted butter, softened
  • 300g panettone or brioche loaf, sliced
  • Icing sugar, to serve
  • Raspberries, to serve
Instructions:
  • Preheat the oven to 180C. Combine the sultanas and Marsala in a small bowl, allowing them to soak for 30 minutes.
  • While the milk, cream, orange zest, vanilla pod, and seeds gently heat in a small pan, whisk together the eggs, egg yolk, and sugar until well combined. Once the cream begins to bubble, carefully pour it into the egg mixture while whisking constantly. Set the mixture aside for later use.
  • Spread butter on panettone slices and arrange them in a 2L (8-cup) baking dish. Strain cream mixture, discard solids, then pour over panettone. Let sit for 30 minutes to infuse flavors. Place baking dish in a larger dish, fill halfway with boiling water. Bake until custard is set and top is golden, about 45 minutes. Let rest for 15 minutes. Serve with a dusting of icing sugar and raspberries on top.
