Marsala braised beef

Cozy up with a mouthwatering marsala braised beef dish featuring parsnips, pumpkin, and silverbeet.
Ingredients:
  • 600g beef chuck casserole steak, cut into 3cm cubes
  • Flour, for dusting
  • 19.66 gm olive oil
  • 5 small shallots, peeled, halved lengthways
  • 2 sticks celery, cut into 2cm pieces
  • 1 sprig fresh rosemary
  • 1 bay leaf
  • 2 cloves garlic, finely chopped
  • 187.50 ml Angoves All' Uovo (an Australian flavoured, fortified wine similar to Sicilian marsala)
  • 400g can crushed tomatoes
  • 875.00 ml beef or chicken stock
  • 4 strips orange peel, (removed with peeler), white pith removed
  • 1/2 butternut pumpkin, peeled, seeded, cut into 2cm pieces (about 3 cups)
  • 5 small parsnips, peeled, cut into 3cm pieces
  • 200g (about 3 large leaves) silverbeet, stems removed, leaves roughly chopped
  • Crusty bread, to serve
Instructions:
  • Season the beef generously with salt and pepper in a bowl. Sprinkle flour over the beef and toss until evenly coated, gently shaking off any excess.
  • Preheat a large casserole pot over medium-high heat until very hot. Add 1 tablespoon of oil and cook beef until browned, approximately 6 minutes. Drain beef on a sieve set over a bowl to remove excess fat.
  • Heat the rest of the oil in the pan and sauté shallots, celery, rosemary, bay leaf, and garlic, stirring occasionally and adjusting heat, until the vegetables begin to soften and turn golden brown, about 4 minutes.
  • Pour in the wine and deglaze the flavorful browned bits from the base of the pot.
  • Combine tomatoes, beef, stock, and orange peel in a large pot. Bring to a gentle boil, then reduce heat and simmer covered for 1 1/2 hours, stirring occasionally.
  • Combine the pumpkin and parsnip with the beef, cover, and simmer for 20 minutes. Uncover and cook for an additional 10 minutes or until the vegetables and beef are fork-tender.
  • Add the silverbeet into the mixture and sauté for 3-4 minutes until tender.
  • Ladle the flavorful stew into bowls and enjoy with freshly baked crusty bread.
