Ingredients:
  • 4 egg whites
  • 107.50 gm caster sugar
  • 90.00 gm brown sugar, sifted
  • 100g Milk Baking Chocolate, broken into pieces
  • 35g butter
  • 125g Original Spreadable Cream Cheese
  • 112.50 gm icing sugar, sifted
Instructions:
  • Whisk the egg whites until they form stiff peaks. Slowly add the sugar, beating well after each addition until fully dissolved. Repeat the process with the brown sugar until fully incorporated.
  • Transfer the meringue into a piping bag fitted with a 1.5cm fluted nozzle, and pipe 48 rosettes, each 3cm wide, onto baking trays lined with parchment paper.
  • Bake at a low 120°C for 1 1/4 hours until crisp and dry. Let it cool in the oven slightly ajar.
  • Melt the chocolate and butter together in a bowl over simmering water. Once melted, remove from heat and let cool.
  • Combine the PHILLY and icing sugar until smooth, then mix in the melted chocolate until just combined. Chill for 15 minutes before using.
  • Spread a luscious teaspoon of PHILLY cream on half of the meringues, then gently press together with the remaining meringues to create delectable sandwiches. Enjoy immediately.
