Classic caramel tarts with fluffy meringue topping.
Ingredients:
  • 375.00 ml plain flour
  • 40.00 gm caster sugar
  • 40.00 gm butter or margarine
  • 1 egg, beaten
  • 180.00 gm brown sugar
  • 20.00 ml plain flour
  • 257.50 gm milk
  • 2 egg yolks
  • 20.00 gm butter or margarine
  • 2 eggwhites
  • 107.50 gm caster sugar
Instructions:
  • In a bowl, combine flour and sugar, then work in butter until mixture looks like fine breadcrumbs. Mix in egg and just enough water for a soft dough. Chill in the refrigerator for 30 minutes.
  • Preheat your oven to 180°C. Roll out the pastry to line a 23cm pie plate, ensuring the base and sides are covered. Use a fork to pierce the pastry 6 times. Bake for 15 to 18 minutes until lightly golden. Allow it to cool before proceeding.
  • For the filling: In a saucepan, mix sugar and flour. Stir in a small amount of milk until a smooth paste forms. Gradually add the rest of the milk, egg yolks, and butter. Cook while stirring until the filling thickens and boils. Let cool, then spoon into the crust.
  • Prepare the topping by whipping the egg whites until soft peaks form. Gradually add the sugar, one spoonful at a time, while beating until fully dissolved. Evenly spread this mixture over the caramel filling and bake for 15 minutes or until it achieves a light golden hue. Serve and enjoy!
