Decadent dessert glaze for a sweet finish.
Ingredients:
  • 125.00 ml Top 'n' Fill Caramel
  • 4 eggs, separated
  • 300ml thickened cream
  • 40.00 ml vanilla sugar
  • 4.40 gm vanilla essence
  • 100g packet meringue nests, crushed
  • 62.50 ml flaked almonds, toasted
  • berries, to serve
Instructions:
  • Grease a 7cm deep, 20cm round cake pan. Use an electric mixer to beat caramel in a small bowl until smooth. Spread it on the base of the pan. Clean the beaters. Beat egg yolks and sugar in a large bowl until pale and thick. Stir in cream, vanilla sugar, and vanilla essence until fully combined. Clean the beaters.
  • Whisk egg whites in a separate bowl until stiff peaks form. Gently fold them into the egg yolk mixture until just combined, then fold in the meringue and almonds.
  • Gently spread the fluffy meringue over the luscious caramel, ensuring a smooth layer. Seal the pan with plastic wrap and then foil before freezing the dessert overnight.
  • Soak pan in hot water for 1 minute. Invert onto a platter, spread caramel evenly. Slice and enjoy with fresh berries.
