Create delectable nougat at home using basic pantry staples for year-round indulgence!
Ingredients:
  • 2 sheets edible rice paper
  • 160g almond
  • 140g pistachio
  • 100g glace cherries, halved
  • 300g white sugar
  • 60ml honey
  • 60ml liquid glucose
  • 60ml water
  • 1 eggwhite
Instructions:
  • Preheat your oven to 180°C and lightly grease the sides of a 15cm square cake pan. Trim the rice paper sheets into two 15cm squares, then place one square in the pan. Spread almonds on an oven tray and bake in the preheated oven for 10 minutes until lightly toasted. Transfer the almonds to a bowl with the pistachios and cherries, then set aside.
  • In a medium saucepan over low heat, mix together sugar, honey, glucose, and water. Stir constantly and use a wet pastry brush to wipe down the sides of the pan to eliminate any sugar crystals. Cook for 5-7 minutes until the sugar dissolves. Increase heat to high and let it boil. Without stirring, cook for another 5 minutes until a candy thermometer reaches 154°C for the crack stage.
  • With an electric mixer, whip the egg whites in a clean, dry bowl until they form stiff peaks. Slowly pour in the hot sugar syrup while continuing to whisk. Once all the syrup is mixed in, add the almond mixture and gently stir to combine.
  • Efficiently spoon nougat mixture into pan and smooth the surface. Cover with remaining rice paper and gently press. Allow to cool for 1 hour. Transfer to clean surface and cut into small squares with a sharp knife.
