Delicious cashew meringue cookies, perfect plain or with chocolate/caramel drizzle.
Ingredients:
  • 5 egg whites, room temperature
  • 0.25 teaspoon cream of tartar
  • 1.5 teaspoons cornstarch
  • 4 cups confectioners' sugar, sifted
  • 2 cups finely chopped cashew nuts
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare two cookie sheets by lining them with parchment paper.
  • Whip egg whites in a large dry glass or metal bowl until soft peaks form. Add vanilla, cream of tartar, and cornstarch. Continue whipping at medium speed, gradually adding confectioners sugar 1/4 cup at a time until soft peaks form. Fold in cashew pieces with a rubber spatula. Drop rounded teaspoonfuls 2 inches apart onto prepared cookie sheets.
  • Bake for approximately 15 minutes in the preheated oven until the edges turn a light golden brown. Allow to cool on wire racks, then store in an airtight container at room temperature once fully cooled.
