Elevate gingerbread with a decadent brown sugar meringue topping.
Ingredients:
  • 2 1/3 cups Gold Medal™ all-purpose flour
  • 1/3 cup granulated sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1 cup molasses
  • 1/2 cup shortening
  • 3/4 cup hot water
  • 1/2 cup chocolate-covered toffee bits
  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup packed brown sugar
  • 1/4 cup chocolate-covered toffee bits
Instructions:
  • Preheat the oven to 325°F. Grease and flour a 9-inch springform pan or 9-inch square pan. In a large bowl, mix all gingerbread ingredients (except toffee bits) with an electric mixer on low speed for 30 seconds, then beat on medium speed for 3 minutes. Stir in 1/2 cup of toffee bits. Transfer the mixture into the pan.
  • Bake for around 50 minutes, or until a toothpick inserted in the center comes out clean.
  • In a medium bowl, use an electric mixer on high speed to whip the egg whites and cream of tartar until foamy. Gradually beat in the brown sugar and then gently fold in the 1/4 cup of toffee bits.
  • Preheat oven to 400°F. Spread meringue over hot gingerbread and bake until light brown, for 8 to 10 minutes. Serve warm.
