Brown Sugar Shortbread Cookies

Cookies develop irresistible crunch when cooling.
Ingredients:
  • 1.25 cups packed brown sugar
  • 2.5 cups all-purpose flour
Instructions:
  • In a large mixer bowl, whip together margarine and sugar until creamy. Mix in vanilla, then slowly incorporate flour until well combined.
  • Form dough into a ball, tightly wrap in plastic wrap, and chill until firm for at least 1 hour or up to 3 days.
  • Preheat the oven to 300°F (150°C).
  • Roll out the dough on a lightly floured board until it's 1/4" thick. Cut the dough, then place on lightly greased sheets. Bake for 35-40 minutes or until firm to the touch (press very lightly to test). Transfer the baked goods to racks and let them cool before storing in an airtight container.
