Indulge in this delightful vegan brownie baked oatmeal for a sweet and satisfying breakfast treat.
Ingredients:
  • Non-stick cooking spray
  • 2 very ripe medium-sized bananas
  • 2 cups old-fashioned rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon chia seeds
  • 1 tablespoon espresso powder (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups unsweetened almond milk
  • 1/4 cup creamy peanut butter
  • 1/4 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 cup vegan semi-sweet or bittersweet chocolate chips or 1 (2-ounce) bar vegan chocolate, chopped, divided
  • Flaky sea salt, for serving (optional)
Instructions:
  • Preheat your oven to 375°F while generously coating an 8x8-inch baking pan with cooking spray.
  • Mash the bananas with a fork in a large bowl until you have about 1 cup.
  • Combine the oats, cocoa powder, chia seeds, optional espresso powder, baking powder, and salt together, and mix with a rubber spatula.
  • Combine almond milk, peanut butter, maple syrup, and vanilla in the mixture. Stir well to blend the flavors, then fold in half of the chocolate.
  • Spread the prepared mixture in the baking pan, top with the rest of the chocolate, and bake for 30 to 35 minutes until the oatmeal is puffed and the edges pull away.
  • Let the oatmeal cool for 10 minutes at room temperature. Top with flaky sea salt, if desired, and enjoy warm or at room temperature.
