Modern twist on Baked Alaska: Brownie, strawberry ice cream, meringue layers in a simple 13x9 dessert for an over-the-top finish.
Ingredients:
  • 1 box Betty Crocker™ Fudge Brownie Mix
  • Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
  • 6 cups (1.5 quarts) strawberry ice cream, softened
  • 6 egg whites, room temperature
  • 3/4 cup sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla
Instructions:
  • Preheat the oven to 350°F and generously grease the bottom of a 13x9-inch pan with either shortening or cooking spray.
  • Prepare and bake the brownies following the instructions on the box. Allow them to cool completely on a rack for about 1 hour.
  • Spread the luscious softened strawberry ice cream over the delectable cooled brownie, then pop it in the freezer as you whip up the meringue.
  • Combine egg whites, sugar, cream of tartar, and vanilla in a medium glass or metal bowl. Stir until blended. Place the bowl over a pan of simmering water. Stir occasionally for 16 to 20 minutes until the sugar has dissolved, and the mixture reaches 160°F. Pour the mixture into a large bowl and beat with an electric mixer on high speed for 8 to 10 minutes until stiff glossy peaks form. Use a small icing spatula to swirl the meringue over the top of the ice cream layer. Freeze for at least 3 hours or overnight.
  • Preheat the oven to a blazing 500°F. Bake the meringue for 3 to 5 minutes until peaks are gorgeously golden brown. Keep covered in the freezer for later enjoyment.
