Brownie caramel cheesecake

Indulgent and creamy cheesecake perfect for any sweet craving. Chill for 3 hours before serving in a 20cm x 28cm tart pan or slice pan.
Ingredients:
  • 150g unsalted butter, chopped
  • 150g dark chocolate (70% cocoa solids), chopped
  • 8.80 gm vanilla extract
  • 220g (1 cup) caster sugar
  • 4.00 eggs
  • 75g (1/2 cup) plain flour
  • 120g (3/4 cup) Brazil nuts, roasted, roughly chopped
  • Chocolate pearls, to serve (optional : see Notes)
  • 200g Green & Black’s Maya Gold Dark Chocolate, chopped (see Notes)
  • 250g full-fat cream cheese, softened
  • 110g (1/2 cup) caster sugar
  • 250g mascarpone
  • 75g unsalted butter, chopped
  • 165g (3/4 cup) caster sugar
  • 100ml thickened cream
Instructions:
  • Preheat the oven to 160C. Grease the tart pan and line the base with baking paper. For the slice pan, line the base and short sides with a doubled sheet of baking paper, extending 4cm beyond the rim.
  • For the brownie base, melt butter and chocolate in a bowl over simmering water. Add vanilla and a pinch of salt, then mix well. Remove from heat, stir in sugar until combined. Add eggs one by one, whisking after each addition. Gently fold in the flour. Pour batter into a pan and bake for 20 minutes until slightly moist in the center. Cool brownie in the pan on a wire rack.
  • Preheat oven to 180C. For the filling, melt the chocolate in a bowl over simmering water, ensuring the bowl doesn't touch the water. Let cool slightly. Using an electric mixer, beat cream cheese until smooth. Add sugar, vanilla, and eggs one at a time, beating well after each addition. Mix in melted chocolate and mascarpone. Spread filling over brownie layer, tap gently, then level it in the pan. Bake for 10 minutes, then reduce oven to 150C and bake for another 10 minutes until set. Cool, then refrigerate for 3 hours before serving.
  • In a heavy-based pan over medium heat, combine butter and sugar. Stir constantly for 8 minutes until a dark caramel forms (it may appear oily, but will thicken once cream is added). Carefully pour in cream while stirring, then remove from heat and let it cool.
  • Place the cake on a platter and generously drizzle caramel sauce over the top. Sprinkle with Brazil nuts and chocolate pearls for an extra touch of decadence, if desired.
