Brownie Ice Cream Sandwiches

Easy frozen brownie ice cream sandwiches with colorful sprinkles.
Ingredients:
  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • Water, vegetable oil and egg called for on brownie mix box
  • 1 pint vanilla ice cream, slightly softened
  • Assorted sprinkles and miniature chocolate chips, as desired
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pan). Line a 9-inch square pan with foil, leaving some overhanging edges. Grease the foil with shortening or cooking spray. Prepare and bake brownies according to box instructions. Allow to cool fully on a rack for 1 1/2 hours.
  • Chill the brownies in the freezer for 30 minutes. Once chilled, lift the brownies out of the pan using the foil, then peel the foil away. Cut the brownies into 16 equal squares.
  • Scoop 2 tablespoons of ice cream onto the bottom of a brownie square. Place another brownie square on top, bottom side down, and gently press together. Roll the sides in sprinkles and place in a shallow pan. Freeze for 1 to 2 hours until the ice cream is firm.
  • Individually wrap each frozen sandwich in plastic wrap before storing in the freezer for later enjoyment.
