Cheesy bacon potato casserole: a quick and versatile family favorite brunch dish baked to perfection.
Ingredients:
  • 4 pounds new potatoes, skinned, cut into 1-inch cubes
  • 1 pound processed cheese food, cubed
  • 2 cups mayonnaise
  • 1 pound bacon, cooked crisp and chopped
  • 1 onion, finely chopped
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Add potatoes to a large pan and cover with water. Bring to a boil, cook until just soft, then drain and transfer to a large bowl.
  • Fold the processed cheese into the hot potatoes with a delicate touch, ensuring they stay intact. Stir occasionally until the cheese is completely melted.
  • Combine the mayonnaise, bacon, and onion in a separate bowl. Gently fold into the potato-cheese mixture until fully mixed. Transfer the mixture to a 9x13-inch baking dish.
  • Roast in the oven set to the perfect temperature for 50 minutes.
