Savory sausage and Cheddar cheese potato casserole, perfect for brunch.
Ingredients:
  • 1.5 pounds potatoes, peeled
  • cooking spray
  • 1 (16 ounce) package pork breakfast sausage
  • 1 sweet onion, chopped
  • 7 eggs
  • 1 (8 ounce) package Cheddar cheese, grated, divided
  • 0.5 cup milk
  • salt and ground black pepper to taste
Instructions:
  • Preheat your oven to a piping hot 450 degrees F (230 degrees C). Use a fork to prick the potatoes all over, then arrange them on a baking sheet.
  • Bake the potatoes in the preheated oven until soft, for 50 minutes to 1 hour. Allow them to cool for at least 15 minutes before handling.
  • Preheat oven to a cozy 350 degrees F (175 degrees C) and lightly coat a casserole dish or 9x13-inch pan with cooking spray.
  • In a large skillet over medium-high heat, brown and crumble sausage for 5 to 7 minutes. Transfer cooked sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes, then add to the bowl with the sausage.
  • Combine eggs, half of the Cheddar cheese, milk, salt, and pepper with the sausage mixture in the bowl.
  • Grate the potatoes and mix them into the bowl with the sausage. Transfer the mixture to the prepared dish and sprinkle the remaining Cheddar cheese on top.
  • Bake in the hot oven until the casserole is warm throughout and the cheese is gooey and bubbly, approximately 35 minutes.
