Cheesy vegetarian sausage and eggs baked on a bed of buttery sweet potatoes for a hearty breakfast dish.
Ingredients:
  • 1 (8 ounce) package vegetarian sausage links (such as Morningstar Farms®)
  • 0.5 cup water, or more as needed
  • 4 cups shredded sweet potatoes
  • 0.25 cup butter, melted
  • 1.5 (8 ounce) packages shredded, reduced-fat mild Cheddar-mozzarella cheese blend
  • 0.5 cup finely chopped onion
  • 1 cup finely sliced fresh spinach leaves
  • 1 (16 ounce) container low-fat small curd cottage cheese
  • 8 jumbo eggs
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a 9x13-inch baking dish.
  • In a spacious skillet, lay the sausage gently and add about 1/4 inch of water. Cook the sausage over medium heat until the water evaporates and they are evenly golden brown, which will take about 10 to 15 minutes. Proceed by crumbling the cooked sausages into a bowl.
  • Combine sweet potatoes and butter in a bowl until well mixed, then evenly spread the mixture in the 9x13-inch dish.
  • Combine the Cheddar-mozzarella cheese blend, onion, spinach, cottage cheese, eggs, and crumbled sausage in a large bowl; spread over the sweet potato layer.
  • Bake the casserole in the preheated oven for about 1 hour, or until a toothpick inserted in the center comes out clean and the eggs are set. Allow it to cool for 5 minutes before serving.
