This Paleo breakfast bake features sweet potatoes, eggs, mushrooms, and sausage for a satisfying and nutritious morning meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 sweet potato, diced
  • 1 pound sausage
  • 0.5 cup chopped onion
  • 0.5 red bell pepper, diced
  • 1 cup sliced fresh mushrooms
  • 1 cup torn kale leaves
  • salt and ground black pepper to taste
  • 5 eggs
  • 0.33333334326744 cup water
  • 1 teaspoon dried thyme, or to taste
  • 1 green onion, diced
Instructions:
  • Preheat your oven to 400°F (200°C) for the perfect cooking temperature.
  • In a generous drizzle of olive oil, sauté sweet potatoes in a large skillet over medium heat until tender, about 8 to 10 minutes. Transfer to a spacious bowl.
  • Crumble and brown sausage in the skillet over medium-high heat for 5 to 7 minutes, then add to the bowl with sweet potato.
  • Sauté the onion and red bell pepper in the skillet until tender, approximately 3 minutes. Season with salt and pepper, then add the mushrooms and kale. Continue cooking until the kale softens, about 3 minutes. Transfer to a bowl.
  • Combine eggs, water, fragrant thyme, salt, and pepper in a bowl, whisk until mixture is smooth. Add to the savory sausage blend, then transfer everything into a generously-sized baking dish.
  • Roast sweet potato in the oven until golden brown, for 20-25 minutes. Allow it to rest for 5 minutes before topping with fresh green onion.
