Portable frittata, ideal for lunch on the go!
Ingredients:
  • 750g orange sweet potato, peeled, cubed
  • 350g capsicum
  • 2 long red chillies, deseeded, thinly sliced
  • 3 green onions, finely chopped
  • 62.50 ml chopped fresh coriander leaves
  • 6 eggs
  • 126.25 gm pure cream
  • 82.50 ml grated parmesan cheese, or vegetarian hard cheese
Instructions:
  • - Preheat your oven to 190°C (170°C fan-forced). - Grease a 6cm-deep, 22cm x 30cm ovenproof dish.
  • In a microwave-safe bowl, gently cover the potato with plastic wrap and microwave on high for 6 to 8 minutes until tender. Drain any excess moisture and then transfer the potatoes to a prepared dish. Add in the capsicum, chili, onion, and coriander, and mix everything together.
  • In a jug, combine eggs, cream, cheese, and garlic, whisk together until smooth. Season with salt and pepper. Pour the mixture over the vegetables. Bake for 30 minutes or until golden and set. Serve hot.
