Spicy Sweet Potato Biscuits

Fluffy and lightly spiced sweet potato biscuits made with Original Bisquick® mix. Ready in 25 minutes and perfect for any bread basket!
Ingredients:
  • 2 3/4 cups Original Bisquick™ mix
  • 1/2 teaspoon ground red pepper (cayenne)
  • 1/3 cup cold butter
  • 1 cup mashed cooked sweet potatoes
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • Additional butter, if desired
Instructions:
  • Preheat oven to 450°F then generously coat a cookie sheet with cooking spray.
  • Combine Bisquick mix and red pepper in a medium bowl. Using a pastry blender or two table knives, cut in 1/3 cup of butter until the mixture resembles coarse crumbs. In a small bowl, blend sweet potatoes and milk together, then add to the butter mixture. Stir with a fork until the dough pulls away from the sides of the bowl.
  • Place the dough on a generously floured surface and coat it with flour by gently rolling it. Knead the dough lightly 6 to 8 times. Roll or pat the dough to a 1-inch thickness. Use a floured 2-inch biscuit cutter to cut out the biscuits and place them about 1 inch apart on a baking sheet.
  • Bake until light golden brown for 12 to 15 minutes. Brush with melted butter and serve warm.
