Festive baked oatmeal infused with sweet potato, cinnamon, and nutmeg - perfect for fall!
Ingredients:
  • 3.5 cups rolled oats
  • 0.5 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 cup cooked and mashed sweet potato
  • 1 cup milk
  • 2 eggs, lightly beaten
  • 0.25 cup vegetable oil
Instructions:
  • Preheat your oven to a perfect 350 degrees F (175 degrees C) and gently grease an 8x8-inch baking pan.
  • Combine rolled oats, brown sugar, baking powder, salt, cinnamon, and nutmeg in a mixing bowl, stirring until evenly mixed.
  • Combine mashed sweet potatoes, milk, eggs, and vegetable oil in a separate bowl, blending until smooth. Pour the sweet potato mixture into the oats mixture and mix thoroughly. Evenly spread the mixture into the prepared baking dish.
  • Bake in a preheated oven until the oatmeal is set and the top is golden brown, approximately 30 minutes.
