Ingredients:
  • 4 medium unpeeled sweet potatoes (1 1/2 lb)
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Instructions:
  • Preheat your oven to 450°F and generously coat a 15x10x1-inch pan with cooking spray.
  • Cut sweet potatoes into 1/2-inch wedges. Toss potatoes in a large bowl with oil, salt, and pepper. Arrange potatoes in a single layer in a pan.
  • Bake without covering for 25-30 minutes, remember to turn the potatoes occasionally until they are perfectly golden brown and fork-tender.
