Mexican fondue fries

Spicy cheese sauce elevates sweet potato fries.
Ingredients:
  • 750g sweet potatoes
  • Cooking spray oil
  • 126.25 gm pouring cream
  • 375.00 ml grated cheddar
  • 1 tsp chopped pickled jalapeño chillies
  • 1/2 tsp Mexican chilli powder
  • Chopped green shallots, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan forced, then prepare 2 large baking trays by lining them with baking paper.
  • Cut the sweet potatoes into 1cm-thick sticks and place them on prepared trays. Drizzle with oil, ensuring they are well coated. Bake them in the oven for 30 minutes, flipping them once halfway through baking. Finally, season to taste before serving.
  • Combine cream, cheddar cheese, jalapeños, and chili powder in a small saucepan over low heat, stirring until smooth.
  • Garnish fries with shallots and fresh coriander. Drizzle with the sauce before serving.
