Overnight breakfast bake: Potatoes, cheesy eggs, and sausage in one pan, perfect for easy mornings. Refrigerate for 8 hours before serving.
Ingredients:
  • 1 lb smoked spicy sausage (andouille, chorizo or kielbasa), cut into 3/8-inch slices
  • 1 large onion, chopped (3/4 cup)
  • 1 medium red bell pepper, chopped (1 cup)
  • 1 medium green bell pepper, chopped (1 cup)
  • 3 cloves garlic, finely chopped
  • 1 bag (20 oz) refrigerated home-style potato slices
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups shredded sharp Cheddar cheese (12 oz)
  • 12 eggs
  • 3/4 cup milk
Instructions:
  • Prepare the baking dish by spraying it with cooking spray. In a skillet, cook the sausage over medium heat for 5 to 7 minutes until it begins to brown, stirring occasionally; drain excess fat if needed. Add the onion and cook for 2 to 3 minutes until slightly softened. Stir in both bell peppers and cook for 1 minute. Finally, add the garlic and cook for 30 seconds until softened.
  • Create a delicious potato base in the baking dish. Season with 1/4 teaspoon of both salt and pepper. Add a layer of flavorful sausage mixture and cheese. Repeat the layers to build a mouthwatering dish.
  • Whisk together eggs and milk in a large bowl, then pour the mixture over the layers in the baking dish. Cover and refrigerate for 8 hours or overnight, but not more than 24 hours.
  • Preheat your oven to 350°F. Cover a baking dish with nonstick foil or regular foil sprayed with cooking spray. Bake for 1 hour 30 minutes to 1 hour 40 minutes or until the dish is set and the potatoes are tender when pierced with a fork. Remove from the oven and let it rest for 5 minutes before cutting.
