Try this make-ahead breakfast casserole with savory sausage, hearty potatoes, and fluffy eggs using Bisquick® mix!
Ingredients:
  • 1 lb bulk pork sausage
  • 2 boxes (5.2 oz each) seasoned shredded hash brown potatoes
  • 1 medium red bell pepper, chopped (1 cup)
  • 1 tablespoon dried chopped onion
  • 2 cups shredded Cheddar cheese (8 oz)
  • 1 cup Original Bisquick™ mix
  • 1/2 teaspoon pepper
  • 3 1/2 cups milk
  • 6 eggs
Instructions:
  • Preheat oven to 375°F and grease a 13x9-inch (3-quart) glass baking dish. In a large skillet over medium-high heat, cook the sausage for 5 to 7 minutes until fully cooked; then drain excess fat.
  • Combine the cooked sausage, raw potatoes, bell pepper, onion, and 1 cup of cheese in a large bowl, then transfer the mixture to a baking dish.
  • Combine Bisquick mix, pepper, milk, and eggs in a medium bowl until well blended. Pour the mixture over the potatoes. Top with the remaining 1 cup of cheese. Cover with foil and refrigerate for at least 8 hours, but no more than 24 hours.
  • For 30 minutes, bake covered until light golden brown around edges. Uncover and bake for an additional 18 to 22 minutes. Allow to stand for 10 minutes before serving.
