Irresistible ham and potato casserole with gooey cheese and eggs, perfect for weekend gatherings.
Ingredients:
  • 1 cup diced fully cooked ham (6 oz)
  • 2 boxes (4.6 oz each) Betty Crocker™ julienne potatoes
  • 1 medium green bell pepper, chopped (1 cup)
  • 1 tablespoon dried chopped onion
  • 2 cups shredded Cheddar cheese (8 oz)
  • 1 cup Original Bisquick™ mix
  • 3 cups milk
  • 1/2 teaspoon pepper
  • 4 eggs
Instructions:
  • Grease a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Arrange slices of ham, potatoes, bell pepper, onion, and 1 cup of cheese in a baking dish. In a separate large bowl, combine Bisquick mix, milk, sauce mix (from potato boxes), pepper, and eggs until well blended. Pour the mixture over the ingredients in the baking dish and top with the remaining 1 cup of cheese. Cover the dish and refrigerate for at least 8 hours, but no more than 24 hours.
  • Preheat oven to 375°F. Bake for 40-45 minutes until golden brown on top and a knife inserted in the center comes out clean. Allow to rest for 10 minutes before serving.
